If you are looking for a fabulous and decadent pasta, which is ideal for the festive season as a celebration meal, you just found it!

  • 1 medium red onion, sliced into rings
  • 150g chestnut mushroom, sliced
  • 50g fresh cranberries
  • 1tbsp olive oil
  • 70g walnuts, chopped
  • 150g tagliatelle pasta
  • 250ml plant single cream
  • 1tbsp cranberry sauce
  • large handful of fresh baby spinach leaves


  • Cook pasta, drain and set aside
  • While pasta is cooking:
  • Roast walnuts for about 5 minutes at 180C until crunchy, set aside
  • In a large pan, fry onion and mushrooms until lightly browned
  • Add cranberries and cook for a further 3 minutes until they soften
  • Add cream and cranberry sauce, stirring well until hot
  • Add cooked pasta and continue cooking until pasta is hot
  • Add walnuts and fresh spinach, stir in gently
  • Serve and enjoy
