A fabulous festive snack or lunch, or you could serve with chips as a tasty dinner.

stuffed beetroot wrap top

Serves 4


  • 170g sage and onion stuffing mix
  • 200g baby spinach leaves
  • 4 beetroot wraps
  • 4 tbsp cranberry sauce
  • 4 tbsp vegan mayonnaise


  • Prepare stuffing mix into balls, as directed to make 12 cooked balls
  • Lay out beetroot wrap
  • Spoon 1 tbsp of cranberry sauce on half the wrap
  • Spoon 1 tbsp of vegan mayonnaise on the other half
  • Add 50g spinach into centre of wrap
  • Use 3 stuffing balls per wrap, cut each in half and lay across centre
  • Fold over wrap and then tuck tightly in as you wrap up into a roll
  • Cut in half and serve
